Gibraltar

On our next stop, we drove to Gibraltar, an English Territory.  It was like "Little England" right smack in the middle of Spain.  In order to get into Gibraltar, you must go through customs and show your passport.  You even get a chance to drive across a commercial runway that's still in use today!  Gibraltar also has wild monkeys!  If you're not careful, they can jump into your car, or even climb on you!  You'll see that it happened to one of our fellow tour mates, and once I saw this happen to her, I jumped inside the bus! I ate traditional fish and chips and we even spotted an English phone booth!

Balsamic Watermelon Chicken Salad

Cold, crisp, and crunchy salads have been on my meal plan every day. I found this delicious recipe and can't wait to try it this week: Balsamic Watermelon Chicken Salad from Pinch of Yum. I'm not a huge fan of blue cheese and I might skip the almonds. Let me know if you decide to try this! 


INGREDIENTS
  • 1 cup balsamic vinegar
  • 1 lb. boneless skinless chicken breasts
  • 3 teaspoons all purpose seasoning (I used a spice mix I got at a specialty food store)
  • 1 tablespoons olive oil
  • 4 cups baby spinach or greens
  • 2 cups cubed watermelon
  • ½ cup blue cheese crumbles
  • ¼ cup sliced or crushed almonds
INSTRUCTIONS
  1. Pour the balsamic vinegar into a small saucepan and bring to a boil. Reduce heat and simmer for 15-20 minutes until the balsamic vinegar is significantly reduced and starting to become syrupy.
  2. Meanwhile, turn a grill or nonstick skillet to high heat. Sprinkle the chicken with the seasoning on both sides and drizzle with the olive oil. Transfer to the hot grill and cook until no longer pink on the inside and nicely browned on the outside. Let rest for 5 minutes; cut into small cubes.
  3. Layer the spinach with the chicken, watermelon, blue cheese, almonds, and drizzle with the balsamic reduction to taste. Top with additional olive oil if desired.

Welcome to Cordoba!  This was the hottest stop on our tour through Spain.  It had to be 100 degrees or more there.  We saw some pretty amazing architecture while we were there, and we had some pretty delicious gelato, too!

I strongly feel that my photos speak for themselves.  I hope you're enjoying my journey through Spain through my photos!  The cathedral that is pictured at the end of my post is the world's largest Gothic monument!
