Cinco de Mayo [Recipe] - So Delicious!!!
Happy Cinco de Mayo, friends!
When I think about Cinco de Mayo, I think about Mexican favorites that include margaritas, tacos, dips, salsa, quesadillas, and enchiladas. My husband makes a mean margarita and you haven't lived until you've tried it. I promise.
Tonight I'm sharing a favorite recipe that my sister introduced me to last summer. After mixing together the ingredients, you might find that it doesn't look appetizing. AllRecipes.com even includes the words "ugly dip" in their title for it. But it's, oh, so delicious, and you won't be able to stop after one bite.
The recipe is called Black Bean and Feta Cheese Dip. My sister calls it Southwestern Corn Salsa. It's a great side to a Mexican dinner, or on top of a cold salad, or as I've always had it, served as a delicious dip! The dip is crunchy, colorful, and made with fresh and healthy ingredients. You just have to give it a try! You won't be disappointed! The best part? It takes 10 minutes to whip up... try it!!
